Luck of the Irish

When I was living in Eastern Massachusetts there was a local vineyard that produced award winning wines and champagne. I loved their wine and the atmosphere of this vineyard so much I convinced them to do a pairing meal using me as their chef of course. They said yes do something for St Patrick’s Day. That gave me some pause, I wanted a meal that was both true to old world tradition and modernized. I had a wonderful time and the meal was a huge success. Whether you choose this meal for St Patty’s Day or any day it is a fine feast!

Chardonnay poached salmon nestled in light chive custard and flaky pastry cup
grilled irish soda bread with kerry gold cheese and jam
Glazed corned beef
Seared cabbage wedges, oven roasted parsnips, carrots and kale chips
Mashed yukon gold potatoes with scallions and cream
Trifle of wine soaked sponge cake, fresh berries and lemon curd cream
